Finally started to watch the 8 part SoundBreaking PBS doc and it's very cool; a lot of the same anecdotes from the 60's to '90's period but the newer technology and ways of music distribution is very inspiring...
One of my favorite music docs is the Classic Albums episode on The Who's "Who's Next". The version on DVD is the one to watch, YouTube may have it as a rental, well worth a few bucks if you've never seen it and like the Who & especially the way Townshend used his demos to blueprint the bands records.

Prob. one of the best audio/recording industry docs I've seen. So well done.
‘I Am Trying to Break Your Heart’ is a great doc about Wilco making Yankee Hotel Foxtrot. I love watching bands in the studio. Any of the ‘Classic Albums’ series are pretty good depending on if you like the band or album, although after watching a band making an album it gives new appreciation for the music. I wasn’t much of a Tom Petty fan till I saw the episode of ‘Damn the Torpedoes’. I’m a huge Beatles fan and there are lots of docs on them but I really liked ‘Beatles Stories’. Interviews with lots of celebs and their meeting Beatles and the like. The interview with Henry Winkler meeting Paul is probably my favorite from that movie. Also ‘Good Ol Frieda’ is a fun watch.

Here's one of my favourite music documentaries, and the first one that sprang to mind when I read the thread title:
B-Movie: Lust & Sound in West-Berlin 1979-1989

It charts the journey of alternative music in West Berlin From Punk up to the Loveparade, with a short detour into porn (something for everyone!)
Judging by previous recommendations, I suspect @greengrocer might particularly like it
