What is the recipients relationship to music? That would really be the most helpful to find inspiration. A Cello player probably generally won’t care about techno on iPad, or things like that. Some context will probably help.

Playground is a great app for just performing ready made presets, not producing. But it perfectly uses the potential of touch screen and it could be a nice start for newbie:
