Just to clarify to avoid confusion: This demonstration in OP's post is of Bluetooth audio latency. Has nothing to do with Bluetooth midi latency (the kind that's relevant when you're playing an iOS synth from a keyboard controller via Bluetooth midi), which is much faster than even the shortest demonstrated audio latency. Bluetooth audio would come into play if you're producing music on iOS device and routing via Bluetooth audio to external Bluetooth speakers or headphones.
